Cauliflower Pizza Crust with Arugula Salad Topper
I love a good cauliflower pizza crust. It’s a healthier spin on one of my favorite foods, plus it’s a delicious way to get more veggies into your diet. (Who doesn’t need that?) This recipe takes my favorite store-bought Four Cheese Pizza and adds arugula salad on top to dress it up! I think you’re going to love this for a nice lunch or quick dinner.

Cauliflower Pizza: For this recipe, I used Milton’s Thin & Crispy Cauliflower Crust Pizza. Ready in just 15 minutes, these pizzas are so easy and SO delicious, plus they’re certified gluten free and packed with flavor. I used the Four Cheese version which is topped with real Mozzarella, Provolone, Romano and Parmesan cheeses.”
Arugula: I love the peppery taste of arugula so this fresh salad topper to this pizza really adds a pop of freshness and flavor. It’s like combining your side salad with your pizza!
How to make this cauliflower crust pizza with arugula salad topper:
- Bake Milton’s Four Cheese Cauliflower Crust Pizza according to package directions.
- While the pizza is cooking prep the salad: add arugula, thinly sliced red onion and cucumber ribbons to a bowl.
- Whisk together the olive oil, juice half lemon, salt, pepper and chili flakes. Pour over and mix the salad.
- Remove the pizza from the oven when done cooking and top with arugula salad. Serve immediately.

- 2 cups arugula
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 cup thinly sliced red onion
- 1/2 cup cucumber ribbons
- 1/4 tsp salt
- 1/4 tsp chili flakes
- 1/4 tsp ground pepper
Instructions
- Bake Milton’s Four Cheese Cauliflower Crust Pizza according to package directions.
