Prepare dough and place the in a bowl, lightly oiling the top. Cover with a tea towel or cloth, and place the bowl in a warm place to rise for 30-40 minutes, until doubled in size.

Once the dough has doubled in size, remove it from the bowl onto a lightly floured surface. Dust the top with flour. Using a rolling pin, roll out to ½ inch thick, making approximately a 10x10 inch circle or oval.

Pour the cooled apple filling and syrup on half of the dough, spreading it out evenly. Fold the other half of the dough over the top of the apples and pinch around the edges with your fingers to seal.

Using a dough cutter or a knife, gently cut 1-inch rows in both directions to create a grid on the dough. Lightly flour the top of the dough and your hands, and smash the entire dough together until you form a loaf.

Using a dough cutter or a knife, cut the loaf diagonally 4 or 5 times, and then crosswise again from the other direction, making about 12-16 divided pieces.

Grab the divided dough pieces, gently smashing them together to form small mounds to seal in the apples. Place the mounds onto the two baking trays with parchment paper, leaving space to rise.

Cover the baking trays with a tea towel & let the mounds rise in a warm place for 30-40 minutes or until doubled in size. This may depend on your environment. As the dough rises, prepare the glaze.

Add 2-3 inches of oil to a pot. Heat the oil to 360-365F on deep-frying or candy thermometer. Once the fritters have risen and the oil is up to temperature, gently place 2 or 3 fritters into the hot oil.

Fry the fritters for 1 ½ minute on each side, using a slotted spoon to flip. Once the fritters are golden brown, lift them out of the oil, one at a time, and drain any excess. Place fritters onto the wire racks.

Make sure that the oil is at 360-365F before frying more batches. After each batch, allow the fritters to cool for 1 minute, then toss into the cinnamon sugar mix, coating it evenly.
