This easy Vegetarian Picnic Salad recipe is healthy, can be whipped up in only 20-minutes, and it's perfect for your next picnic or pot luck.

It’s picnic season baby! Since a lot is cancelled for the summer of 2020, we are going to be spending a lot more time getting creative on how we’re enjoying the sunny, warmer weather. Cue picnics! Picnics are a great way to get outdoors, enjoy your local green spaces and parks, or even your backyard, and it can be fun for the whole family. This Vegetarian Picnic Salad recipe can be a great easy dish to contribute to any picnic this summer.

What are the benefits of honey? 

For this recipe, I used BeeMaid’s Liquid Honey. Honey is extremely versatile and can be used in any baking or cooking recipes to add sweetness. It is also a great substitute for refined sugar and a much healthier alternative. Honey is rich in antioxidants that your body loves. Plus, it’s a natural alternative to processed sugars. BeeMaid honey, in particular, is one of my favourites because it is made with love by Canadian beekeepers. BeeMaid is owned by a cooperative of over 300 beekeepers across Western Canada, which makes me feel really good about where this honey is coming from and what I’m putting into my body (and recipes).

How to make this Vegetarian Picnic Salad? 

This recipe is simple, and will last in your fridge too! In fact, if you want to build more flavours, leave it in your fridge for a day or so to give it time to marinade with all the flavours.

All you do to make this Vegetarian Picnic Salad is add everything but the feta to a large bowl and combine. You’ll save the feta to add on top with the dressing when you are ready to serve. 

For the dressing, add all your ingredients in a large jar (for easy storage) and use a hand blender to blend it all together until it’s well combined. It should only take about 30 seconds!

Tip: Sprinkle some of the leftover toppings on top to really make this salad look next level beautiful!

  • For the Salad, It’s super simple, add everything but the crumbly feta to a large bowl and combine!
  • For the dressing, add all your ingredients to a large jar and using a hand blender blend till well combined.  It should take around 30 seconds!
  • Before serving, top with crumbly feta and desired amount of dressing!
  • NOTE: you can also top with leftover toppings the end if you're looking to really make that salad pop and be as beautiful as possible!

Notes

Salad will last up to 1 week in a tight-sealed container in the fridge.
The flavours will continue to build as time goes on.  The longer, the better!
If you don’t have chickpeas, substitute for any favourite legume (lentils, white beans etc).
The dressing will last up to 1 week in a tightly sealed jar or container in the fridge.
