Cashews: Cashews are low in sugar and rich in fiber, healthy fats, and plant protein. They are great to add to dips, or sauces to add a creaminess.
Nutritional Yeast: Nutritional yeast is a must in your plant-based pantry. It is a great source of vitamins and minerals and includes 9 essential amino acids, making it a complete protein like you’d find in animal products.
How to make this queso sauce recipe:
- Add the cashews to a small bowl and cover completely with hot water.
- Allow sitting for 15 – 20 minutes, drain + rinse.
- Transfer the cashews and ALL of the remaining ingredients to a blender.
- Blend on high speed until smooth. Add more hot water to reach desired “queso-like” consistency.
- Transfer to a serving bowl or dish and add jalapeno slices, sundried tomatoes, and chopped cilantro on top.
- Serve warm with prepared fresh veggies and tortilla chips! DELICIOUS!

Queso:
- 2 cups cashews
- ½ cup nutritional yeast
- ½ cup sundried tomatoes in oil, strained
- 1 tbsp olive oil
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp ancho chili powder
- 2 tsp cumin
- 1 tsp vegetable stock paste
- 1- inch jalapeno
- ½ cup vegan cheddar cheese grated
- 1 1/4 cup hot water
Toppings:
- extra jalapeno sliced
- extra sundried tomatoes
- fresh cilantro chopped
