How to make this queso sauce recipe:

  1. Add the cashews to a small bowl and cover completely with hot water.
  2. Allow sitting for 15 – 20 minutes, drain + rinse.
  3. Transfer the cashews and ALL of the remaining ingredients to a blender.
  4. Blend on high speed until smooth. Add more hot water to reach desired “queso-like” consistency. 
  5. Transfer to a serving bowl or dish and add jalapeno slices, sundried tomatoes, and chopped cilantro on top. 
  6. Serve warm with prepared fresh veggies and tortilla chips! DELICIOUS!
