Ingredient Notes:
Bok Choy: Bok choy contains vitamin C, an antioxidant that’s so good for you! In North American cooking it seems to go very underrated but its inexpensive, adds a nice crunch to a recipe, and lots of healthy benefits.
Tamari: Tamari is soy-sauce-like product that originated as a by-product of making miso. If you can’t find tamari, you can use soy sauce in its place.
How to make stir fried noodles:
- Cook pasta according to package directions and set aside while you make the stir fry.
- To a large frying pan over medium-high heat, add 1 tbsp sesame oil. Once the pan is hot, add in the garlic. Cook for a minute and then add in the green onions and cook another minute.
- Add in the vegetables and stir fry for about 5 minutes until tender crisp. Season with 1/4 tsp salt and pepper.
- Turn to medium heat and add in sauce. Bring to a simmer and cook for a few minutes until slightly thickened. Taste and adjust seasoning with salt and pepper.
- Remove from the heat and gently toss with the noodles. Serve topped with cilantro and chili flakes.

What are stir fried noodles called? Two popular choices are chow mein, and lo mein. Chow mein is noodles cooked then finished in the pan, where lo mein is noodles that are cooked all the way through, then added to the pan with the sauce.
Do you boil noodles before stir fry? Generally, yes. Noodles used for stir-frying have to be presoaked or boiled before they can be used.
What is stir fried noodles called in Chinese? The term “chow mein” means stir-fried noodles. Chow means stir-fried, and mein means noodles.
How do you make stir fry noodles not soggy? If you add too many ingredients all at once, then they’ll overlap and steam. Cook each ingredient separately to avoid this from happening.

Veggie Stir Fried Noodles
Ingredients
Stir fry sauce
- 6 tbsp tamari or soy sauce
- 1 tbsp sesame oil
- 1 inch ginger, grated
- 1 1/2 tbsp brown sugar
- juice of half a lime
- 1/2 cup water
- 2 tsp corn starch

- Cook pasta according to package directions and set aside while you make the stir fry.
- To a large frying pan over medium-high heat, add 1 tbsp sesame oil. Once the pan is hot, add in the garlic. Cook for a minute and then add in the green onions and cook another minute.
- Add in the vegetables and stir fry for about 5 minutes until tender crisp. Season with 1/4 tsp salt and pepper.
