Steak – Steak is such a good protein source that is filled with vitamins and nutrients to fuel you. Steak specifically is rich in B vitamins, iron, and zinc. The best part about steak (or beef) is its versatility. You can make sandwiches with it, throw it in a crock pot, grill it up, add it to salads, and the list goes on.
Green Salsa – Green salsa is made with tomatillos vs. regular, red tomatoes. This is what gives it the color! Green salsa adds a bright, tangy flavor to these Steak Tacos, adding a refreshing element to them that is so good.
👩🍳 How to Make Steak Tacos
- Preheat the oven to 400F.
- Prepare the corn tortillas. Line a large baking sheet with parchment paper and spread out 12 small tortillas. Add 3 tbsp shredded cheese to each tortilla, spreading it out onto the tortilla. Set aside.
- Finely chop the white onion and chop the cilantro. Set aside.
- Prepare the steak: Mix all of the steak seasonings together in a small bowl. Pat the steak dry on a cutting board and add the steak seasoning to each side, patting to press into the steak.
- Heat 2 tbsp avocado oil in a cast iron skillet over medium-high heat. When hot, place the steak in. Sear on both sides for about 2 minutes per side.
- Add the butter in and baste for 3-5 minutes, cooking until it reaches your desired temperature (Cook until internal temperature is 130-135 for medium rare-medium.) Or place in the oven to finish cooking to your desired temperature.
- Set the steak aside to rest for a few minutes while you melt the cheese on the tortillas. Place in the oven at 400F degrees for about 5 minutes to melt the cheese.
- Assemble the tacos by slicing the steak and add to the tacos along with chopped white onion, chopped cilantro, sour cream, and green salsa or green hot sauce. (Add avocado if desired). Serve immediately.

- Steak: You can use any cut of beef for tacos, however, I recommend skirt steak, ribeye, or flank steak. These have great flavor and cook quickly.

- Marinate: If you have the time you can marinate the steak for 30 minutes to an hour to soak in the flavors.
- Use the Grill: Grill the steak instead of pan-frying it if you prefer!

These Steak Tacos are best enjoyed when made fresh but you can totally keep the toppings and steak separately, then make the tortillas with cheese when you’re ready to eat. Leftover steak is also great on salads or in bowls!

It’s best to cook the steak whole and slice it afterward. This helps keep the steak juicy and tender. After cooking, let it rest for a few minutes, then slice it thinly against the grain for the best texture.
Either works great but corn tortillas are more authentic and I find add a great flavor. They can also be a great alternative for those with gluten sensitivities.

Juicy Cheesy Steak Tacos
Ingredients
- 12 small corn tortillas
- 2 1/4 cups shredded monterey jack cheese or mozzarella cheese or mix of both
For the steak
- 650-750 g (about 1 ½ lbs) thick cut steak
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp ground pepper
- 1 tsp onion powder
- 1 tbsp chili powder
- 1/2 tsp oregano
- 2 tbsp avocado oil
- 2 tbsp butter
Toppings
- 3/4 cup sour cream
- 1 small white onion, finely chopped
- fresh cilantro, chopped
- green salsa or green hot sauce for serving
- optional: avocados
