This easy spiralized cucumber salad is fresh, creamy, and perfect for summer.

This spiralized cucumber salad is a great salad to add to your rotation this summer. It’s fresh, easy, and topped with a creamy peanut dressing that I want to just smother everything with. This recipe would be great at a BBQ or potluck for a quick dish that’ll take you only 10 minutes to make.

Tahini: Tahini is such a tasty ingredient to have on hand. It can be mixed into dressings, drizzled on just about everything, and mixed into dips like hummus. Tahini is highly nutritious, rich in antioxidants, and that’s only a few of its many benefits.

White Miso: Miso contains lots of healthy vitamins and minerals like vitamin K, manganese, zinc, protein, and calcium. It’s a great ingredient to add to soups, stews, or dressings.

How to make spiralized cucumber salad:

  1. Use a spiralizer to spiralize the cucumbers. Set in a strainer over a bowl to allow some of the water from the cucumber to drip out.
  2. Set aside the cucumber and make the dressing by whisking together or shaking in a jar the tahini, white miso, rice wine vinegar, peanut butter, garlic, lime juice, maple syrup, salt and pepper. The dressing will be thick but that’s ok because it will loosen up when mixed with the cucumber.
  3. Toss the spiralized cucumber with the dressing, chopped cilantro, chopped green onions and white sesame seeds.
