Okay, I made my spin on the TikTok-trending tortilla hack. This crunchy feta, olive, and spinach wrap is going to be your new go-to lunch. This recipe is quick and easy to make, vegetarian-friendly (but can be made vegan), and is the perfect healthy but flavorful meal for you and your family. Oh, and did I mention it’s inspired by the Greek spanakopita?

Olives: If you know me, you know that I’m Greek and I friggin’ love me some olives. This spinach wrap recipe is a dream for me because not only does it have olives, but also tzatziki and feta. But people often question whether or not olives are really good for you, and I’m here to answer that question for you.
I made this recipe with the Olive Commission of California, and I like to make sure that the olives I get are from the farms of California. Why? Because California olives are delicious and nutritious, and add a little something-something to any meal. Their olives are naturally gluten-free and vegan. Contains vitamins E and A, PLUS iron and fiber, and lastly, monosaturated fat, aka the good kind of fat.
Spinach: A well-known and versatile superfood, spinach is so good for you. It is loaded with nutrients that are important for skin, hair, and bone health. This leafy green also provides protein, iron, vitamins, and minerals.
👩🍳 How to Make This Spinach Wrap Recipe
Here’s how you pull together this tasty wrap. Oh, and did I mention, I may have made these wraps using the infamous TikTok tortilla hack because it’s fun, and also a great way to make the perfect grilled wrap.
- To a medium-sized pan heat olive oil for 30 seconds on low-medium heat
- To the pan, add the white onion and cook on low-medium heat for 4-5 minutes. You simply want the onions to become golden so do not overcook or burn
- To the pan, add the garlic and cook for 1 minute before adding the spinach. Let the spinach wilt down completely and cook down any excess liquid before adding in the herbs, feta, olives, and spices
- Cook everything down for another 5 minutes then remove it from the heat and let everything cool.
- Prepare your Tzatziki Sauce for dipping (here’s a recipe for that)
- Place a large wrap on a flat surface and cut from the center to the edge of a wrap on one quarter
- Begin filling each side of the wrap with your spinach mixture then fold from the bottom left triangle, up the top left triangle. then over to the top right triangle and end at the bottom
- Preheat the pan with some butter and once melted cook the wrap for 2 minutes on each side on low heat. Watch this carefully as it can burn very quickly
- Enjoy with your Tzatziki, a fresh crumbling of feta, and more herbs!

👝 How to Store Leftovers
These will last in the fridge for up to 5 days but they will be best enjoyed fresh. The Tzatziki lasts in the fridge for 10 days in a tightly sealed container.

You can easily use vegan feta for this spinach feta wrap, I love Violife Foods’ Vegan Feta! However, if you are a vegetarian, you can just opt for whatever feta you have on hand.
You can but it holds more moisture so you’ll want to let it thaw and then squeeze out as much moisture as possible.

Ingredients
- 1 tbsp. olive oil
- 1 small white onion finely chopped
- 3 cloves of garlic
- 8 cups of fresh spinach
- a handful of fresh herbs like mint dill and basil
- 1/2 cup regular or vegan feta crumbled
- 1 cup fresh green olives roughly chopped
- 1 tsp sea salt
- 1/2 tsp fresh cracked black pepper
- dash of red chili flakes
- 1/2 cup Tzatziki Sauce
- 4 large tortilla wraps
- 2 tbsp. vegan or regular butter
