Avocado: There’s a reason why Avocados are a favourite item in the produce section. They are packed with a wide range of nutrients and good fats – not to mention they are delicious.
Cucumber: A green veggie that fills you up and is super hydrating. Not to mention cucumbers have a delicious crunch.
How To Make This Spicy Cucumber Salad
1. Add cucumber, zucchini and yellow squash slices to a strainer and add a big pinch or two of salt. Place over a bowl and let sit for 10 minutes (this helps get some of the water out of the vegetables before mixing the salad).
2. While the vegetables are sitting, make the dressing by adding all of the dressing ingredients together in a blender or food processor and blend until combined. Taste and adjust seasoning with more salt if desired.
3. After the vegetables have sat in the strainer with salt for 10 minutes, use your hands or a paper towel to gently squeeze/press on them to remove any more excess water.
4. Then add the vegetables and pumpkin seeds to a bowl. Drizzle over the dressing and toss. Top the salad with slices from 1-2 avocados and sprinkle over everything but the bagel seasoning.
Expert Tips & FAQ
The best part about this salad? Add more of your favourites. Can’t find a yellow squash? Use more zucchini! If you don’t have everything but the bagel seasoning, you can top it with a few pinches of salt, pepper, dried onion flakes and sesame seeds.

Ingredients
- 1/2 large cucumber, thinly sliced in circles (or 2 mini cucumbers)
- 1 large zucchini, thinly sliced in circles
- 1 yellow squash, thinly sliced in circles

- 1/3 cup pumpkin seeds
- 1-2 tsp optional: everything but the bagel seasoning
