These adorable holiday shortbread bites are the perfect easy recipe for a holiday treat with added benefits of Herbaland’s Peach Passion Good News Gummies. These shortbread bites are made with simple ingredients and stuffed with creamy vanilla icing and a gummy as a nice surprise when your friends bite into them.

Ingredient Notes:
Herbaland Gummies: These gummies are made with natural color and flavors, they also have the added benefits of fiber and are low in sugar. So these aren’t your regular gummies. Bonus! They are also vegan. It’s so hard to find vegan gummies, but these bad boys are.
Vanilla: There is nothing I could emphasize more than the importance of using a good quality, pure vanilla in your baking. You CAN taste the difference between the real thing and the cheap stuff. Make sure you read the bottle you are buying and make sure it has a natural flavor and isn’t artificial.
How to make shortbread bites:
1. Line 2 baking sheets with parchment paper and set aside.
2. In a large bowl, combine the butter and sugar using a hand mixer on low, speeding up to medium when combined. To the mix, add vanilla, salt, and sprinkles. Combine.
3. To the bowl, add the flour and continue to mix on medium until evenly combined. You know this is fully combined when there are so dry areas/leftover flour in the bowl.
4. Onto one of the parchment-lined baking sheets, create a 1/4-inch rectangle with the dough. Put this into the fridge for 30 minutes (only up to 24 hours). If you want there to be more sprinkles on the bites, then press more onto the dough now.
5. Preheat your oven to 375F once you are ready to cook your shortbread.
6. Using a knife, pizza cutter, or bench scraper, cut the rectangle into small squares or as desired.
7. This next step is very important. Place the shortbread onto the baking sheets and make sure there is enough room between each piece. You do not want them to touch. Bake them for around 8 minutes for tender pieces or 10 minutes for crispier pieces.
8. Let them cool completely on the baking sheets.
9. To make the Shortbread Cookies, stuff with Vanilla Icing and Herbaland Gummies! Enjoy!

Hey Maria, what would you use as a GF alternative flour?
I always recommend using a 1:1 flour! You can find brands like bobs red mill doing this!
These cookies were so simple and fun to make with the kids. They loved adding their own gummy bears and other candy we had laying around. I LOVE shortbread cookies and I find them to be loved by many. They can be cut out into circles or any other shapes and they can also be decorated like sugar cookies.
