Shrimp – Shrimp is low calorie and high in protein. It’s also a good source of selenium, vitamin B12, and omega-3 fatty acids. Shrimp is a budget-friendly seafood that can be used to top a salad, baked into casseroles, or eaten on their own.
Sausage – Sausage is an inexpensive protein source that can add some texture and bring up the protein content of this Shrimp Sheet Pan dinner. You can use any type of sausage you love to make this dish or you can omit it altogether if you prefer to just have a seafood dish.

👩🍳 How to Make Sheet Pan Shrimp
- Preheat the oven to 400F and line a large baking sheet with parchment paper.
- Make the dressing by whisking together olive oil, dried oregano, salt, pepper, lemon juice, red wine vinegar and pressed garlic. Set aside.
- Season the shrimp: In a medium bowl add the defrosted shrimp along with 1 tbsp olive oil, 1 tsp salt, ½ tsp pepper, ½ tsp garlic powder and ½ tsp onion powder and stir to combine. Set aside.
- To the sheet pan add the cut asparagus, sausages (whole), olives, drained and rinsed beans and sliced red onion. Drizzle over half of the dressing and lightly toss to coat everything well. Place the lemon slices within the ingredients on the pan.
- Bake for 20 minutes.
- After 20 minutes, remove the baking sheet from the oven and make space to place the seasoned shrimp. Add back to the oven for 8-10 minutes or until the shrimp are cooked through. The sausages should also be cooked through at this time.
- Remove the sausages from the pan and slice into ½ inch pieces. Add back to the pan.
- To finish, drizzle the rest of the dressing over top of everything on the sheet pan; garnish with fresh parsley, dill and mint; and, finally top with crumbled feta cheese. Serve with a side of tzatziki if desired.
🪄 Tips and Tricks
- Prep The Shrimp: Take the shells and tails off your shrimp if you prefer and pat them dry with paper towels. I find taking the shells and tails off just makes it a lot easier to eat.
- Veggies: You can totally play with the veggies in this meal to make it your own. That’s the beauty of sheet pan dishes!
- Don’t Overcook: The key to shrimp is to not overcook it. Shrimp cooks QUICK so you want to keep your eye on it so it doesn’t turn tough and rubbery.

Sheet Pan Shrimp and Sausage
Ingredients
- 3/4 – 1 lb bag frozen uncooked shrimp (defrosted shrimp, peeled and deveined)
- 1 tsp kosher salt
- 1/2 tsp ground pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp extra-virgin olive oil
- 1 bunch asparagus, trimmed and cut into thirds
- 4 sausages of your choice, whole
- 1 lemon, sliced
- 1/2 cup pitted black olives, halved
- 1 red onion, halved and sliced
- 1 can cannellini or navy beans, drained and rinsed
For the dressing
- 1/4 cup olive oil
- 1/2 tbsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp ground pepper
- 1 lemon, juiced
- 1/2 tbsp red wine vinegar
- 2 small garlic cloves, pressed
For serving
- 2 tbsp fresh chopped parsley
- 2 tbsp fresh chopped mint
- 2 tbsp fresh chopped dill
- 1/2 cup crumbled feta cheese
- optional: tzatziki for serving

Notes
- Use your favourite type of sausages – chicken, beef or pork!
- If you don’t want to use sausages, double the amount of shrimp.
