I think I’ve done it again with this amazing, can’t-stop-eating salad. This Beet Salad and Feta recipe with feta cheese (whipped) and pistachios is seriously going to up your salad game in the best possible way. It’s perfectly comforting (if a salad can be comforting) for colder weather when beets are in season and the earthy flavor of the beets combined with the creamy feta, and the crunch from the pistachios are seriously delicious!

Store leftover Beet Salad with Feta in an airtight container in the fridge. It’s best if you keep the ingredients separate and assemble them fresh, however, it’ll still be delicious either way. This will last in the fridge for up to 4 days.

Roasted Beet Salad and Feta with Pistachios
Ingredients
- 3 cups oven-roasted beets
- 1 cup whipped feta can be made vegan or vegetarian
- 1/4 cup chopped toasted pistachios
- 1/4 cup fresh herbs like dill cilantro, parsley and mint
- 3 tbsp. olive oil
- Juice of half a lemon
- 1 tsp sea salt
- 1/2 fresh cracked pepper
Instructions
- This is a really easy and fun salad! Simple start by making your whipped feta then adding it to the base of 2 bowls!
- Top the feta with roasted beets, fresh herbs and toasted pistachios.
- Drizzle each with olive oil, fresh lemon and dust with salt and pepper.
- Enjoy with a delicious piece of garlic bread!

Either is fine! but if you dont like too salty of salads then id do unsalted
