I love elevating a simple classic dish like salmon with a Mediterranean twist. This stuffed salmon recipe proves that healthy eating can be downright delicious and fancy enough to impress at your next dinner party. Your guests will be asking for the recipe while they reach for seconds!

The ingredients in this dish are inspired by the Iconic Spanakopita. The potatoes are downright AMAZING. They’re crispy on the outside and pillowy perfect on the inside. Spanakopita is traditionally served with tzatziki so it only felt right to bring in my family’s recipe to tie everything together! Enjoy!

All you need is seven ingredients – ones that you probably already have in your pantry and 10 minutes of active prep time + proofing and 30 minutes of cook time! Here’s all you need — you got this bestie! DONT FORGET TO SERVE THESE WITH TZATZIKI OR RANCH!

- 3 cups bread flour (or all purpose flour) - we used @bobsredmill
- 3/4 cup warm water
- 6 tbsp warm whole milk
- 1 1/2 tsp sugar
- 1 1/2 tsp active dry yeast - @fleischmannsyeast
- 3 tbsp olive oil
- 1 1/2 tsp salt - @diamondcrystalsalt

I used @mezzetta hot sauce and @primalkitchenfoods buffalo sauce.

The moment I discovered I could turn ANY protein into balls, it was game over for anything store-bought. When I tell you these trout balls come out perfectly cooked, juicy and 200% better than anything you’ve ever bought frozen you better believe me! They’re giving fish cakes with all the characteristics of a meatball. Seared on a pan to start developing the dish flavours and then finished nestled in with all the creamy orzo and green onions (one of my FAV ingredients EVERRRRR).

I used @bapcertification @colemunrofoods trout responsibly raised in Ontario in these Juicy Trout Balls! @bapcertification is an aquaculture certification program that exists to ensure your seafood is being sourced responsibly. They ensure that farmed seafood meets four key requirements – environmental responsibility, worker safety and welfare, food safety and animal health & welfare through the production chain.

Look for the blue stamp of approval on the packaging to know your fish is BAP-certified!
