Ingredients

ripe mangos, diced into cubes

cucumber, seeds removed, sliced into matchsticks

red onion, diced small

papaya, diced into cubes

chopped cilantro

For the dressing

tamari or soy sauce

fish sauce

sesame oil

rice wine vinegar

Instructions
Make the dressing by whisking together all of the dressing ingredients and setting aside.
Add all of the salad ingredients to a bowl, drizzle with the dressing, toss and serve.

Notes
If you like more spice, try using a finely minced red thai chili pepper instead of chili flakes in the dressing.
If peanuts aren't your favourite, you can substitute with chopped cashews.
This salad would be delicious served as a side to your favourite protein.
