If making the jackfruit, add the jackfruit, olive oil, lemon juice, and ALL of the spices listed for the jackfruit to a large pot.
Cook the jackfruit over medium-high heat for 30 – 45 minutes until tender and flavour absorbs.
As you cook the jackfruit, stir every few minutes and add splashes of water to allow to tenderize properly. You want the consistency to be like pulled chicken.
When the jackfruit is almost done cooking, prepare your homemade OR premade fries and all of the other ingredients.
Once the fries are hot and ready, toss the fries with a drizzle of olive oil, juice from quarter of a lemon, Diamond Crystal Kosher Salt, garlic powder, onion powder and dried oregano.
Transfer the fries to a large serving dish.
Add and stack ALL of the other prepared fry toppings along with the jackfruit (if using).
Serve immediately with FRESH TZATZIKI! You will be SPEECHLESS!
