Ingredients

rice noodles

cup
avocado oil

green onions, chopped

fresh ginger, minced or shredded

garlic cloves, minced

tbsp
spicy chili miso
3
tbsp
tamari or soy sauce
juice
of half a lime

minced cilantro

cup
cucumber, julienned (sliced in matchsticks)

chickpeas
Instructions
Cook noodles according to package instructions and set aside.
In a heat proof bowl add green onion, ginger and garlic.
In a small frying pan or pot heat 1/3 cup avocado oil and once hot, add to the bowl and stir to combine.
To the bowl whisk in miso, tamari, and lime juice.
Toss the sauce with the noodles, chickpeas, cucumber and cilantro and then enjoy!
