This Easy Coffee Cake Recipe will become your new go-to for brunch or afternoon tea. With a moist, flavorful crumb and irresistible streusel topping, it's simple to make and guaranteed to impress.
Preheat the oven to 350 degrees. Prepare the 9-10 inch springform pan by greasing with 1-2 tbsp butter and then dust with flour.
Make the streusel: Mix the flour, brown sugar, cinnamon and salt in a bowl. Add the cubes of butter and use your hands to rub it into the flour/sugar mixture until it's combined and resembles crumbs. Set in the fridge.
In a small bowl mix together the flour, salt, baking powder and baking soda and set aside.
In a large mixing bowl, use a hand mixer to cream butter and sugar together until fluffy, 2 to 3 minutes. Add eggs and mix until incorporated. Then add the Greek yogurt, vanilla extract and cold brew coffee and mix on low speed until smooth. (You can also use a stand mixer with a paddle attachment if desired).
Add the dry ingredients slowly, mixing over low speed until combined.
Pour half of the batter into the prepared springform pan. Sprinkle over half of the streusel mixture. Pour the remaining batter into the pan and sprinkle the rest of the streusel mixture on top.
Bake for 40-60 minutes, *START CHECKING AT 40 MINUTES AS EVERY OVEN BAKES DIFFERENTLY* until the cake is cooked through and a toothpick inserted in the cake comes out clean.
Let cool slightly in the pan before moving to a wire rack to cool completely.
When the cake is cooled, make the icing by mixing together the powdered sugar, vanilla and coffee until it becomes a smooth icing. Once the cake has cooled, drizzle the icing over, slice and serve!

If you prefer an icing without coffee flavour, simply swap the cold brew for milk and you'll have a plain vanilla icing instead.
