Preheat the oven to 250F and set aside a baking sheet.
In a large shallow bowl whisk together milk, eggs,cinnamon, nutmeg, maple syrup and vanilla extract.
In a medium-sized, non-stick frying pan heat 2 tbsp butter over medium heat.
Quickly dip slices of bread into the egg mixture until well coated and add it to the frying pan (should be able to cook 2 at a time). **Pro tip: Make sure you don’t over-soak the bread. Fully submerge it in the batter for only a a second or two and let any excess drip off before cooking.**
Cook one side for about 3-4 minutes, until golden brown, sprinkle 1 tsp brown sugar on each slice (if desired) and then flip to cook the second side. Cook a few more minutes on the second side until golden brown and then remove to a sheet pan.
Place cooked slices of french toast on the sheet pan and keep warm in the preheated oven while you cook the rest of the slices, adding butter to the pan as needed. You may need to turn the heat down to medium-low as the brown sugar can burn easily.
Serve warm topped with maple syrup and butter and fresh berries if desired.

If you can't find brioche bread, a fresh white bread, thickly sliced would also work.
