🍲 Ingredients

Chicken Gyro – For these Pita Bowls I used Chicken Gyro. Gyro can take some time to make as it’s all in the marinade and slow cooking. You can use whatever chicken you prefer in this dish but the Gyro really adds authenticness to the Greek Pita Bowl that I think you’re going to love. Follow my recipe here.

Pickled Onions – I find pickled onions add such a flavor and tanginess. They are so easy to make and you can keep them in your fridge for months to throw on tacos, in bowls, or salads. Follow my Pickled Onions recipe to make your own. Although you can use fresh red onions for these Pita Bowls, I love the kick the Pickled Onions give.

👩‍🍳 How to Make Pita Bowls

  1. Make the gyro chicken according to this recipe.
  2. Once the chicken is cooked, prepare the pita bowls.
  3. Turn the heat on the oven down to 350F.
  4. Using a 9-inch cake tin, gently press the pita into the tin to create a bowl shape. Brush with a bit of olive oil and bake for about 5 minutes or until crisp (and stays in a bowl shape).
  5. Let the pita cool for a few minutes and then remove to a plate.
  6. Assemble the chicken pita bowls – divide the ingredients between the 2 pita bowls. Add the lettuce as the bottom layer then add the pickled onions, sliced cucumber, baby tomatoes, black olives, chickpeas, crumbled feta, and cooked & sliced gyro chicken.
  7. Season the vegetables with a pinch of salt if desired. Add dollops of garlic sauce and/or tzatziki and garnish with fresh mint and fresh dill.
  8. Enjoy the whole bowl! Don’t forget you can eat the pita bowl too as you enjoy it all.

🗒 Tips and Tricks

  • Freshness: Use the freshest veggies for the best flavors and brightest colors. You can also swap any of the veggies for your favs or what’s in season.
  • Marinate the Meat: The key to Chicken Gyro is to marinate it for long enough for it to get all the flavors. You can marinate it for up to 24 hours but marinate it for at least 1 hour.
  • Tzatziki: Tzatziki is so easy to make with a few simple ingredients. You can make your own by following my Tzatziki Recipe.

Like most salads, this Pita Bowl is best enjoyed fresh. However, you can keep the ingredients separate (veggies, dressing, pita bowl) and combine when you’re ready to eat if you want to meal prep this recipe.
