This creamy baked brie recipe combined with this easy raspberry mocktail is perfect for the holiday season.
The best part about the holiday season (for me) is all the amazing comforting appetizers that you can make. This baked brie is one of those recipes that is so easy-to-make but looks and tastes impressive. I mean, who doesn’t like brie? PLUS, I’ve paired it with a refreshing smashed raspberry mocktail recipe you’ll want to make all holiday season.

Ingredient Notes:
Brie: Brie is a soft cows-milk cheese named after a French region called Brie. It’s pale in color and is so amazing on its own or melted into delicious recipes.
Organika Electrolyte Wild Raspberry: I made the raspberry mocktail using Organika’s Electrolyte in Wild Raspberry. This is a go-to blend for me as its thirst-quenching has a delicious flavor, and has 0 sugar too. Bonus that it also replenishes my electrolytes as well so it’s great post-work-out or even after a night out.
How to make baked brie:
- Preheat the oven to 400F and line a baking dish or baking sheet with parchment paper.
- Roll out puff pastry on a lightly floured surface until its large enough to wrap around the wheel of brie (ours was 8×8).
- To a parchment lined dish, set the puff pastry centred on the parchment and then set the brie in the centre of the puff pastry. Spoon the fig jam on top of the brie. Fold the corners into the center, gently, and pinch to close (see photos).
- Set in the fridge to chill for 10 minutes.
- Remove from the fridge and brush the egg wash (whisk egg with 2 tbsp water) and brush the puff pastry, coating the entire outside. Sprinkle the top of the brie with a mixture of brown and white sugar.
- Bake for 15-20 minutes or until cooked to golden brown. Set aside to cool for 5 minutes before serving. Arrange crackers or sliced baguette around the baked brie and serve warm.
How to make a smashed raspberry cocktail:
- Add a raspberries to a glass with Organika Electrolyte Wild Raspberry. Using a muddler or wooden spoon crush the raspberries with the electrolyte powder.
- Scoop crushed ice into the glass on top of the crushed raspberries.
- Add your favorite non-alcoholic spirit and then top with cranberry juice, soda water and ginger beer.
- Garnish with cinnamon stick and rosemary sprig.

Baked Brie with Smashed Raspberry Mocktail
Ingredients
For the baked brie
- 1 wheel of brie cheese (about 200-300g)
- 1 sheet puff pastry
- 4 tbsp fig jam
- 1 egg for egg wash
- 1/2 tbsp brown sugar
- 1/2 tbsp white sugar
For the smashed raspberry mocktail
- 1/2 tsp Organika Electrolyte Wild Raspberry
- 4 fresh raspberries
- crushed ice
- 1 oz cranberry juice
- 1 oz soda water
- 1 oz ginger beer
Instructions
For the baked brie
