I love one-pot meals. This easy spinach feta rice bowl is easy-to-make, and a great dinner for a busy weeknight!
I love delicious, and easy one-pot meals like this spinach feta rice bowl. Sometimes we just don’t have time for an extensive recipe, or a ton of dishes, so a one-pot meal can be an easy solution to have a healthy dinner on the table on those busy nights.

Ingredient Notes:
Spinach: Spinach has vitamins and minerals like vitamin E and magnesium. It’s great for building your immune system and it’s so easy to include in salads, recipes, smoothies, easy one-pot meals, etc.
Feta: Did you know that feta is actually healthier in comparison to other cheeses? It’s low in calories and fat and even has a high amount of B vitamins, phosphorus, and calcium.
RightRice: For this recipe, I used RightRice’s Garlic Herb rice. This rice is packed with the power of nutritious vegetables (unlike regular rice). It has lentils, chickpeas, and green peas, and each serving has over 2x the protein, and 5x the fibre. It also has fewer carbs than rice and it’s a complete protein!! I love this easy (and healthier) swap to regular rice for recipes.
How to make a spinach feta rice bowl:
- To a medium-sized pot, heat olive oil for 30 seconds on low-medium heat.
- To the pot, add the white onion and cook on low-medium heat for 4 – 5 minutes. You simply want the onions to become golden, so do not overcook or burn.
- To the same pot, add the garlic and feta, and cook for 1 minute before adding the spinach.
- Let the spinach wilt down completely and cook off any excess liquid before adding in the olives and spices.
- Cook everything down for another 5 minutes then add the vegetable stock.
- Bring the stock to a boil, then add the RightRice package contents to the pot.
- Remove from heat and let sit for 10 – 15 minutes until the rice is tender.
- Serve with fresh parsley and enjoy!
Expert Tips & FAQ:
Serving: Add red chili flakes or extra feta before serving.
Storage: Store the rice in the fridge in an airtight container for 4 – 6 days! Reheat to serve OR add fresh herbs, tomatoes, and green onion, and enjoy as a cold rice salad! YUM!

Ingredients
- 1 tbsp. olive oil

- 1/2 cup regular or vegan feta crumbled
- 8 cups of fresh spinach
- 1/2 cup fresh black olives roughly chopped
- 1 tsp. sea salt
- 1/2 tsp. fresk cracked black pepper
- dash of red chili flakes
- 1 1/3 cup vegetable stock
- 1 package lemon pepper @RightRice

Can you use regular rice if we can’t find the @RightRice?
yes, that works fine!!
