Not to mention it is easy to put together, and, like any good salad, perfect for making ahead of time. Toss this orzo salad together a few hours or even a few days before, and because it keeps so well – it will taste great whenever you’re ready to eat.

Cucumber: Did you know that cucumbers are 96% water? All that water in cucumbers help keep you hydrated. Plus, it gives cucumbers that perfect crunch in every bite.

How to Make My Mediterranean Orzo Salad

  1. Bring a small pot of water to a boil, add the orzo, and cook based on the instructions of the package.
  2. In a large bowl, combine all of the ingredients.
  3. Stir well until combined.
  4. Add extra olive oil, seasoning, cheese, or extra herbs to taste- then enjoy!

Instead of the Spred’em cheese, use the Cilantro Cashew Cream.

Replace the orzo with quinoa! Absolutely delicious!

Add anything to this salad and enjoy it as an on-the-go lunch, bring to potlucks, etc.!!

Store this Mediterranean Salad in the fridge for 4 – 5 days in an airtight container.
