Cucumber: Did you know that cucumbers are 96% water? All that water in cucumbers help keep you hydrated. Plus, it gives cucumbers that perfect crunch in every bite.
How to Make My Mediterranean Orzo Salad
- Bring a small pot of water to a boil, add the orzo, and cook based on the instructions of the package.
- In a large bowl, combine all of the ingredients.
- Stir well until combined.
- Add extra olive oil, seasoning, cheese, or extra herbs to taste- then enjoy!

Mediterranean Orzo Salad
Ingredients
- 1 cup orzo cooked
- 2 tbsp. extra virgin olive oil
- 1 ½ cups green kale roughly chopped
- 1 cup cherry tomatoes halved
- ½ cup cucumber finely diced
- 1 ½ tsp. salt
- 1 tsp. cracked pepper
- 1 tsp. dried oregano
- ½ cup fresh parsley chopped
- ½ cup fresh cilantro chopped
- ¼ cup pickled jalapeno finely diced
- Juice of 1 lime
- ½ cup Spread’em garlic + chives cheese
Instructions
