When you roast aubergine and then wrap it in aromatic ground beef, and cheese and then bake with potatoes and serve it with a tomato sauce and zesty yogurt something dramatic happens and @onurwoodart made it look so good I just had to try it myself! Wow!

Today we’re making a Turkish delicacy! Since eggplant is the most disliked nightshade, I knew I needed to get creative with this unfortunately underrated veggie! The beef exterior consists of high quality ground beef, lots of my families olive oil, salt, pepper, grated onion, and spices. Once the eggplant is super jammy, I coated it with the beef and cheese and baked it till it’s caramelized, sweet and juicy. When you serve it with the warming tomato sauce, the beef soaks up every bit of flavour. Eggplant is inexpensive and so delicious to cook with and add into recipes. This Roasted Eggplant recipe isn’t just a plain, boring eggplant. This recipe wraps the eggplant in beef and is served with a tomato sauce. It’s a yummy comforting food, and only takes 20 minutes to prep.

This salad is a great meal prep dish for a healthy, hearty salad for lunches, an awesome side dish, or a great, lighter dinner.

Inspired by the flavours of Greece and Blue Zone Citizens who eat meals packed with at least 50% veggies, plenty of beans and limited amounts of animal protein per day. Salads can get a bad reputation for just being a bowl of veggies that may taste good at the moment but leave you hungry in 30 minutes. The key is creating a salad that has filling, hearty ingredients like barley, chickpeas, beets and that delicious Homemade Blackberry Dressing! Fried Cod is such an easy dinner to make in just 35 minutes. Whip up this dish for a healthy meal that delivers flaky, moist fish, with a crispy exterior, and a flavorful feta and herb gremolata. This dish is a great one for your new year goals to eat healthier, and it’s perfect for a quick, weeknight meal that is packed with nutrients.

This combination is so fun and so JUICY! Because let’s be honest, a crunchy piece of cod and green bean is the best! To bread the cod, I used @bobsredmill superior quality California grown Super Fine Almond Flour instead of just using breadcrumbs - and it was so worth it!

I’ve made this recipe before , but I wanted to try it with Bob’s Red Mill Super Fine Almond Flour this time and, ya’ll, I have to say, I am SO impressed with the quality/how much better it tastes with Bob’s Red Mill!
