I'm going to show you how to eat brie cheese the whipped way! This gut-healthy recipe is simple and delicious.
I’ve been seeing recipes all over for making whipped brie so I knew I had to give this a try and make my own spin on it. Oh baby, if you love brie, you’ll wonder why it took you so long to learn how to eat brie cheese this way. This is creamy and versatile, and it even is topped with gut-healthy ingredients.

Ingredients:
Asparagus: Asparagus is naturally rich in prebiotic substances and particularly high in insoluble fiber (which adds bulk to stool and supports regular bowel movements).
Strawberries: Strawberries are rich in vitamin C and other antioxidants which help reduce your risk of several health conditions. Berries, particularly strawberries, and raspberries are also rich in polyphenols known as Hydroxybenzoic acids—derivatives of benzoic acid (these compounds undergo metabolism by colonic bacteria after ingestion—resulting in beneficial metabolites).
Mint: I like to grow mint in my garden. It grows like a weed so it’s super easy to plant it in a pot and have endless mint that is perfect to add to salads, mojitos, or whipped brie like this recipe. It’s also great for settling an upset tummy due to its digestive properties.

How to eat brie cheese:
- Remove the brie from the fridge about an hour before you want to make this dip, to bring it to room temperature. Once at room temperature, use a knife to remove the rind.
- Make the strawberry compote by adding the chopped strawberries, lemon juice and sugar to a small pot or pan, bring to a simmer over medium heat and then turn to medium-low. Cook, stirring occasionally, until strawberries are cooked down, about 5-10 minutes. You want it to be a jammy consistency. Remove from heat and let cool.
- While the compote is cooling, add the sliced radishes to a small bowl, cover with red wine vinegar and add a pinch of salt and sugar. Let sit.
- Place the brie (with rind removed) into a food processor. Start by whipping the brie on high speed for about 3-4 minutes. Then, pause and scrape down the sides of the bowl (the brie could be quite sticky still). Start whipping again, scraping down the sides of the bowl as needed. It could take up to about 10 minutes total for the brie to become lighter in colour and smooth in texture, almost like whipped butter, it should be fairly smooth.

Ingredients
- 300-350 g triple cream brie, room temperature and rind removed *important to only use triple-cream brie at room temperature – this is the only type that will whip to the right consistency*
- 5 asparagus stalks, shaved with a vegetable peeler
- 3-4 radishes, sliced thinly, fresh or quick pickled
- zest from one lemon
- fresh mint for garnish
- pinch chili flakes
- olive oil
- sea salt
Strawberry compote
- 1 1/2 cups chopped strawberries
- 1 tsp lemon juice
- 2 tbsp sugar
