This is one of my fav healthy snack ideas because it's quick and so versatile. These salad skewers can be made your own with whatever ingredients you wish.

I’m sure I can’t be the only one that is always looking for healthy snack ideas. I don’t always have time to eat or make extensive meals, so sometimes snacks have to be my go-to but eating healthy snacks can sometimes be a challenge. These salad skewers are the perfect healthy snack and you can prep them ahead to have them on hand.

Ingredient Notes:

Protein: You can easily add your favorite protein option to these salad skewers. Right now they are vegetarian-friendly but don’t be afraid to add some crispy tofu onto them, chicken, or whatever you wish!

Pasta & Bread: Swap the rigatoni pasta and sourdough bread for whatever you wish! Even pick your top gluten-free options

How to make salad skewers:

  1. Chop the Pink Lady®️ apples, celery, brie cheese, and toasted sourdough bread into 1-inch pieces.
  2. Set aside all prepared ingredients in separate bowls.
  3. On each bamboo skewer, arrange the ingredients as followed: celery, apple, rigatoni, spinach leaves, brie, sourdough, spinach, apple, rigatoni, spinach, brie, sourdough, apple, celery. OR arrange in any way you desire.
  4. Repeat these steps for all of the skewers.
  5. Arrange all of the skewers onto a platter.
  6. Drizzle the olive oil and balsamic vinegar over top of all of them.
  7. Next, add all of the walnuts and press some of them into the brie cheese.
  8. Season the skewers with salt and cracked black pepper.
  9. Serve immediately and enjoy!
