This is one of my fav healthy snack ideas because it's quick and so versatile. These salad skewers can be made your own with whatever ingredients you wish.
I’m sure I can’t be the only one that is always looking for healthy snack ideas. I don’t always have time to eat or make extensive meals, so sometimes snacks have to be my go-to but eating healthy snacks can sometimes be a challenge. These salad skewers are the perfect healthy snack and you can prep them ahead to have them on hand.

Ingredient Notes:
Protein: You can easily add your favorite protein option to these salad skewers. Right now they are vegetarian-friendly but don’t be afraid to add some crispy tofu onto them, chicken, or whatever you wish!
Pasta & Bread: Swap the rigatoni pasta and sourdough bread for whatever you wish! Even pick your top gluten-free options
How to make salad skewers:
- Chop the Pink Lady®️ apples, celery, brie cheese, and toasted sourdough bread into 1-inch pieces.
- Set aside all prepared ingredients in separate bowls.
- On each bamboo skewer, arrange the ingredients as followed: celery, apple, rigatoni, spinach leaves, brie, sourdough, spinach, apple, rigatoni, spinach, brie, sourdough, apple, celery. OR arrange in any way you desire.
- Repeat these steps for all of the skewers.
- Arrange all of the skewers onto a platter.
- Drizzle the olive oil and balsamic vinegar over top of all of them.
- Next, add all of the walnuts and press some of them into the brie cheese.
- Season the skewers with salt and cracked black pepper.
- Serve immediately and enjoy!

Healthy Snack Ideas – Salad Skewers
Ingredients
- 3 large Pink Lady®️ apples
- 3 stalks celery
- 2 – 3 cups spinach
- 2 large slices sourdough bread toasted
- 1 ½ cups rigatoni cooked
- 1 wedge brie cheese
- ½ cup walnuts chopped and toasted
- 2 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- Salt + pepper to season
