Let me introduce you to the ultimate Greek Lentil Salad that is so tasty, so easy, and flavorful. This recipe is a great recipe to whip up for lunches for the week. It combines go-to Greek salad ingredients like feta, red pepper, cucumber, and onions, but I’ve made it heartier by adding in lentils. Lentils are such a great substitute for vegans and vegetarians because they bulk up any meal by adding protein. This recipe is definitely inspired by my Greek roots and my Mom always putting together the best Greek salads growing up.

🍲 Ingredients

Lentils – Lentils are really what makes this lentil salad super filling. Lentils are so versatile and loaded with nutrients. They support a healthy heart, digestive system, and are an excellent source of plant-based protein. For this recipe I used Bob’s Red Mill lentils. I choose their green lentils for this salad as they are a bit spicy and are the most intensely flavored in the lentil family.

Greek Salad Dressing – I have a super simple recipe for Greek salad dressing. It only takes 5-ingredients and 5-minutes of your time to make. You’ll never buy store bought again. Greek dressing should be simple but full of flavor and I use this dressing on everything. It’s so good and a staple!

👩‍🍳 How to Make Greek Lentil Salad

  1. Prepare your lentils, cooking it to the instructions on the Bob’s Red Mill bag or your preferred doneness. 
  2. Drain and rinse the lentils with cold water. Set aside. 
  3. Make the Greek Salad Dressing. Set aside.
  4. Dice the cucumber, red pepper, tomatoes, and red onion to resemble the size of one or two peas.
  5. Finely chop the chives, dill, basil, and mint.
  6. Add the cooled lentils, diced vegetables, and chopped herbs to a large bowl.
  7. Pour the dressing over top and toss the ingredients together.
  8. Season to taste and ENJOY!

  • Meal Prep: Prepare your salad a few days in advance! It can keep in the fridge for 4 – 5 days.
  • Customize: Customize this salad and add or swap any ingredients you wish! Adding avocado, shredded carrot, or even the addition of soft lettuce would be delicious!!
  • Lentils: If you don’t feel like cooking you’re lentils you can buy pre-cooked, canned lentils, rinse them and use those instead.
