Greek Feta Dip with Sizzling Scallions

Greek feta dip – one of my absolute favourites. This recipe is creamy, cheesy and has a spicy kick to it.
My spin on an ethnic Greek dish, this Greek feta dip is great for every occasion and the perfect dip to go with a toasted baguette or if you’re looking for something gluten free – serve with slices of zucchini or roasted eggplant.

Ingredient Notes
Garlic: I have said it before, and I will say it again – I love garlic! It is a staple for me when I cook since it brings so much flavour to some of my favourite dishes. Not to mention it is loaded with antioxidants. Garlic is the perfect ingredient to bring this Greek feta dip to life!
Sun-Dried Tomatoes: What is so special about sun-dried tomatoes? When they’re dried, tomatoes shrink up, losing 90% of their weight from the loss of their water content and become sweet, tangy, and chewy, and are used as a garnish on many dishes like pastas and dips.
How to Make My Greek Feta Dip
- In a food processor, add the feta cheese, olive oil, lemon juice, and cold water. Blend until the feta mixture until smooth and light.
- Transfer to a serving dish, wrap with plastic and set aside in the fridge.
- As that sits, prepare the toppings.
- Using a sharp knife, finely chop the green onion, mince the garlic, slice the sundried tomatoes, and add it to a medium-sized bowl.
- Add the black pepper and chili flakes.
- Mix the ingredients together to combine.
- In a small pot, add the olive oil and bring to a rapid boil.
- Add the bowl of combined toppings to the oil.
- Stir briefly, then pour over top of the whipped feta.
- Serve immediately with slices of toasted baguette!

For a gluten free option, serve with slices of zucchini, roasted eggplant, or just toast some gluten free bread!
To make this dairy free, use your favorite vegan feta!
