These easy refried bean flautas are comforting, delicious, and perfect for summer.

Flautas are made with a large flour tortilla that is rolled up around a filling and then deep-fried. They originate from Mexican cuisine and are so delicious!

Why you’ll love flautas:

  • Filling: The beans in this flautas recipe give a serving of protein to keep you full longer
  • Versatile: Get creative with the seasoning, and/or the fillings

Ingredient Notes:

Refried Beans: I just buy the canned refried beans usually found with other Mexican ingredients in your store, however, you can make your own too if you’re feeling really ambitious.

Queso Fresco: If you have a hard time finding this you can swap for Mexican Crema or feta cheese instead. Or if you’re vegan, you can swap for your fav plant-based feta.

Salsa Verde: Made with tomatillos and green chilis, this salsa has a beautiful green color to it. However, if you can’t find a jar at the grocery store, and don’t want to make your own, you can easily just swap this for regular salsa.

How to make flautas:

  1. In a large pot, melt the butter on medium heat for around 30 seconds.
  2. Add the onions and garlic, sautéing until slightly caramelized and fragrant, 2 – 3 minutes.
  3. Next, add the refried beans, ALL of the spices, and lime juice.
  4. Cook for 5 minutes to allow all of the flavours to combine.
  5. Transfer to a large bowl and cool slightly.
  6. To assemble the flautas, warm up the corn tortillas in a pan over low heat or in the microwave until soft and pliable.
  7. Scoop approximately 3 tbsp of the refried beans to the middle or each tortilla.
  8. Sprinkle some of the crumbled queso fresco on top of the refried beans and roll.
  9. Lightly grease a large pan with avocado oil and place over medium-high heat.
  10. Place the assembled flautas in, seam side down, and cook for 2 – 3 minutes on each side until golden and slightly crispy.
  11. Set the finished flautas on a serving dish, and repeat these steps until all are completed.
  12. Top the flautas with salsa Verde, Mexican crema, more crumbled queso fresco, and fresh cilantro.
  13. Enjoy immediately- serving with lime wedges!

Toppings: Serve any extra toppings you wish, like avocado, Pico de Gallo, etc. 

Serving: Take this dish with you to potlucks, dinner parties, or even summer barbeques- they will be a HUGE HIT! 

Storage: Store the ungarnished flautas in an airtight container in the fridge for 3 – 4 days! You can garnish them upon enjoying them again OR store all of the elements separately and make them fresh each time!
