Okay, I have something so special for you. This is like a Greek version of a charcuterie board but make it a kebab board using my delicious Chicken Kebab Recipe and some of my favorite toppings and sides. This recipe is so beautiful for a dinner party, a backyard get-together, or a fun family dinner where you can get the kids involved in the kitchen.

🍲 Ingredients
Chicken – The chicken marinade for this recipe is so simple. It includes only a few simple ingredients like oregano, olive oil, and garlic to make a flavorful, juicy kebab. It’s a lean source of protein, so it’s not only flavorful but good for you
Roasted Veggies – On the sheet pan you’ll roast some sweet peppers and potatoes to add a delicious roasted side dish to the chicken. You can serve the chicken with these veggies on their own and not even add all the fresh ingredients.
👩🍳 How to Make This Chicken Kebab Recipe
- Preheat the oven to 425F. Line a large baking sheet with parchment paper.
- Marinate the chicken: Make the marinade in a medium bowl by whisking together salt, pepper, pressed garlic, dried oregano, lemon juice and olive oil. Add the chicken cubes and let sit in the bowl while you prep the other ingredients.
- Once prepped, add the chopped red and orange peppers and halved potatoes to the parchment-lined baking sheet. Season with 2 tbsp olive oil, 1 tsp salt and 1/2 tsp pepper. Toss to coat everything evenly.
- Next, thread the chicken onto the skewers, you’ll have 4-6 skewers. Nestle the chicken skewers in the middle of the pan and move the potatoes and peppers a bit to the side.
- Bake everything together for 25-30 minutes until chicken is cooked through and peppers are starting to turn golden.
- Use a large cutting board or sheet pan and line with parchment paper. Assemble the vegetables, tzatziki and pitas around the edges of the board or sheet pan, leaving a spot in the middle for the cooked chicken skewers. Season the cucumber and tomatoes with a big pinch of salt. Serve family style (reference the recipe photos for serving inspiration!)

👝 How to Store Leftovers
I recommend storing the chicken separately in the fridge in an airtight container so you can easily heat leftovers before serving with the cold sides.
🤔 Common Questions
To prevent wooden skewers from burning, you’ll want to soak them in water for about 10-15 minutes before you skewer them and cook them.
Make sure to leave some time to marinade your chicken while on the kebabs to maximize that marinade and get all of it soaked into the meat. This will make for flavorful and juicy kebabs.

Ingredients
For the chicken
- juice of one lemon
- 1/4 cup olive oil
- 1 tbsp dried oregano
- 3 garlic cloves, pressed
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 2 lbs chicken breasts (about 3-4), cut into 1 inch cubes
- 4-6 kebab skewers
For the sheetpan
- 1.5 lb baby potatoes, halved
- 1 red pepper, cut into 1 inch pieces
- 1 orange pepper, cut into 1 inch pieces
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
For serving
- 1 cup tzatziki (use our Easy Tzatziki Recipe)
- 1 cup crumbled feta cheese
- 1 cup pickled red onion (use our Quick Pickled Onions Recipe)
- 2 cups chopped cucumber
- 2 cups halved baby tomatoes
- 4 cups thinly sliced romaine lettuce
- 4 pitas (use our Pita Recipe)
Instructions
