These delicious vegan buffalo chicken nachos are the perfect game day or after-school snack. They are versatile, have a delicious kick to them.

I’m not sure if you’re ready for this buffalo chicken nachos recipe. I’m about to blow your mind! This vegan recipe is the perfect spin to your favorite buffalo chicken wings and makes a great appetizer, Friday-night dinner, or game-day snack.

Ingredient Notes:

Buffalo Cauliflower: For a vegan version of your beloved buffalo chicken wings, I’ve used Sol Cuisine’s Buffalo Cauliflower Wings for this buffalo chicken nachos recipe. These “wings” are tangy with a kick. They’re coated in a crispy breading and tossed in a signature buffalo spice blend. They add a pop of flavor to these nachos.

Hot Sauce: If you aren’t a big hot sauce person, you can definitely omit the hot sauce I added on the top at the end or choose whatever sauce you enjoy based on the level of spice preference.

How to make buffalo chicken nachos: 

  1. Preheat your oven to 450F and line two baking sheets with parchment paper, and set aside.
  2. Transfer the Sol Cuisine Buffalo Cauliflower Wings to the one-lined baking sheet and cook as instructed on the packet. Once cooked, reduce heat to 400F.
  3. Start by adding a layer of tortillas and cheese to the other lined baking sheet.  Repeat for one more layer of chips. Then add jalapeños, olives, tomatoes, red onion, and onion flakes.
  4. Bake for around 15 minutes or until the cheese is completely melted and gooey.
  5. Once cooked, garnish with hot sauce of choice, more green onions, and sour cream.  You can also add more tomatoes and olives.
  6. Enjoy hot immediately!

Expert Tips & FAQ: 

Toppings: Have fun with the toppings but I strongly suggest the red onion, green onion, and tomatoes.

I can’t find onion flakes: Onion flakes are also known as onion granules.
