If you haven’t already noticed, I have been on a homemade bread kick lately. This brioche bread recipe is seriously the best and pairs so nicely fresh out of the oven with some flavored butter or even homemade jam. Use it to make French toast, sandwiches, grilled cheeses, the options are endless.

Ingredient Notes:
Flour: Use all-purpose flour or bread flour here for best results. If you want to get fancy with substitutions, I recommend you ensure that you have the proper measurements since not all flour is made the same so it’s not always a 1:1 substitute.
Milk: Use dairy milk, or if you want this to be dairy-free, use almond, oat, or soy. Whatever you like or have on hand!
How do you make this brioche bread recipe?
- Line a small 8×4 loaf pan with parchment paper lengthwise and set aside.
- In a medium-sized bowl, stir together flour, sugar, salt, and butter. Using a hand mixer, combine these ingredients, breaking up the butter until it resembles sand and is fully incorporated. Make a well in the middle of the flours.
- In a small bowl, add the milk and heat in the microwave until hot to the touch. Add the yeast to the milk and stir to combine.
- In another bowl, add the eggs and whisk.
- Pour the eggs and milk-yeast mixture into the well. Mix with a wooden spoon until it comes together
- Transfer the dough to a lightly floured surface and knead well for a full 5 minutes, until smooth.
- Form the dough into a loaf shape, then cut in half lengthwise. Shape each long piece of dough to create a uniform shape. Carefully place each piece of dough in the loaf pan side-by-side.
- Cover the loaf pan with a cloth or tea towel and set in a warm place for 4 hours. The dough would have doubled or more in size and be light to the touch.
- Preheat the oven to 385F.
- In a small bowl, combine one egg and milk. Prior to baking, brush the top of the brioche with the egg wash.
- Using a small knife cut three slightly angled cuts into each half of the brioche loaf.
- Bake for 25 – 30 minutes, until golden brown.
