This easy, fresh blood orange salad with red onion and mint can be whipped up so quickly, is loaded with health benefits, and great for a refreshing side or lunch.

Let me tell you, blood oranges are so underrated and don’t get the hype they deserve – especially when they are the main ingredient. Why are we out here giving regular oranges all the attention when you could have the floral and tart flavor of blood oranges, combined with the gorgeous color they add to any dish? This easy blood orange salad is going to open your eyes to that fruit you often bypass in the fruit aisle of a grocery store.

Why you’ll love this fresh blood orange salad:

Easy – There is only two steps to making this salad – it doesn’t get easier than that.

Yummy – This salad is both fresh and tart giving you both those sweet and savory flavours.

Customizable – You can also get creative with this salad. If you don’t have, or can’t find blood oranges, you can use grapefruit or regular oranges instead. You can also try this salad with different herbs of your choice. I used mint and thyme but get crazy and have fun with it.

Ingredient Notes

Blood Oranges: While there isn’t much of a difference in the calories and vitamin levels between blood oranges and regular oranges – they are both loaded with vitamin C. So much so, one orange will provide you with over 100 percent of your daily vitamin C needs.

Pistachios: Pistachios are so tasty and are a great source of healthy fats, fibre, protein and have both antioxidant and anti-inflammatory traits. They are one of my favourite additions to salads – that is there are any left while prepping.

How to Make My Blood Orange Salad

  1. To a salad bowl begin supreming the blood orange and squeeze each to remove excess juice.
  2. Add the rest of your ingredients to the salad bowl and gently toss.
  3. Enjoy!
