This Baked Brie with Jam has a crispy outside to it and a layer of red pepper chili. It is the perfect holiday appetizer that your guests will love!
I LOVE baked brie. It’s creamy, it’s so good on crackers, and it makes the perfect, easy appetizer. This Baked Brie with Jam is all those things and more. I wrapped it in phyllo sheets so you get a nice crunch, and put a layer of pistachios and red pepper jelly for an extra kick and pop of flavor. This is a great appetizer to make for your guests this holiday season and it won’t take you more than 30 minutes to have on the table.

🍲 Ingredients
Brie – Brie is made with cow’s milk and is named after Brie, the French region where this amazing cheese originated. Brie can be baked with both sweet and savory ingredients added to it, it can also be melted into a fancy mac and cheese, or grilled cheese, and it’s so dang good!
Phyllo – Phyllo is usually found in the freezer section of your grocery store where you’d find frozen pie crust. Phyllo is very thin unleavened dough that is often used to make pastries. I find when you wrap brie in it, it gives it this crunchy crust that is the perfect addition to the creamy brie.
👩🍳 How to Make Baked Brie with Jam
- If desired, start by making the sugared rosemary and sugared cranberries for presentation – see instructions in the notes below.
- Preheat the oven to 400F.
- Line a baking sheet or baking dish with parchment paper. Melt the butter and set aside. Start with laying a sheet of phyllo dough horizontally on the baking sheet and brush the entire sheet with melted butter. Repeat with 3 more sheets of phyllo dough, buttering each one and layering each sheet just overlapping at different angles.
- Place the brie in the centre of the phyllo sheets and add the red pepper jelly on top of the brie.
- Fold the phyllo sheets tightly over the brie to create a parcel of brie and brush the phyllo with more melted butter.
- Bake for 18-20 minutes or until crispy and golden brown. Let the brie sit for a few minutes before using the parchment paper to lift it onto a serving plate. Garnish the top of the brie with chopped pistachios and a generous drizzle of honey and serve with crostini or crackers. Add sugared cranberries and sugared rosemary to the serving dish for a festive holiday presentation if desired.

- Presentation: If desired, make sugared cranberry and rosemary for presentation. Here’s how:
- Rosemary: Rinse the fresh rosemary sprigs in water, drip off some of the excess water and then roll in sugar. Set aside on parchment paper to dry.
- Cranberries: Rinse the cranberries in water, let excess drip off and then roll in sugar. Set aside on parchment paper to dry.
- Crostini: Crostini is great when served with brie. To make your own, cut the baguette into slices, brush with olive oil on both sides and place on a baking sheet. Bake for 5-7 minutes per side until crisp. Set aside.

🗒 Substitutions
- Red Pepper Jelly: You can use a sweet jelly if you prefer for this Baked Brie with Jam. Brie pairs wonderfully with just about any kind of jam.
- Brie: If you cannot find brie, another creamy cheese that works the same is camembert cheese.
- Pistachios: Feel free to omit these if there are nut allergies, or swap with roasted pecans or walnuts.

👝 How to Store Leftovers
This brie is really best enjoyed when fresh but you can store leftovers in the fridge and reheat in the oven if you find yourself with leftovers to use up.
🤔 Common Questions
Generally, no. Red pepper jelly doesn’t usually have much of a spice to it. However, there are some that are made with hotter hot peppers that pack a kick. Taste test it first before your smother it onto your brie.
Brie is a creamy cheese and the consistency gets creamier and more delicious when baked. However, you can totally just cut slices right off a piece of brie and eat it cold!

- 1/4 cup unsalted butter, melted
- 1 250-300g wheel of brie cheese
- 1/3 cup red pepper jelly
- 1/4 cup finely chopped pistachios
- liquid honey
- for serving: crackers and/or crostini
- garnishes: sugared rosemary sprigs (6-8 small sprigs) and cranberries (1/2-1 cup)
