Good lord! This recipe is so dang delicious. I mean, I say that about all food, but I’m serious. Can you really go wrong with anything that has pasta and garlic in it? I think not! This Aglio e Olio recipe will knock your socks off. Plus, it takes under 30-minutes to make so you won’t be spending all night in the kitchen whipping up a meal your whole family will love.

Olive Oil: Since there are minimal ingredients in this recipe, you’ll want to ensure you buy and use a quality olive oil for the maximum flavor. Look for oil labeled “extra virgin” and make sure to buy it in a bottle that isn’t clear, as light can deteriorate the flavor.
Parmesan Cheese: You can use vegan or regular parm here. You can even make your own vegan parm by using cashews, nutritional yeast, garlic powder and sea salt. See the full recipe here.
👩🍳 How to Make Aglio e Olio
- Bring a large pot of water to a boil and generously season with salt.
- Cook spaghetti till al-dente and set aside once cooked. Reserve 1/4 cup pasta water.
- To a medium-sized pan or cast-iron skillet add your olive oil and heat on medium for 30 seconds before adding the garlic.
- Cook down the garlic for 5-6 minutes, stirring often to avoid burning. Once golden and fragrant, add the parmesan cheese – evenly over the entire pan – and cook down for 1-2 minutes. Dust with chili flakes (as desired) and add your pasta to the pan.
- Add reserve pasta water, a tiny pinch of sea salt, black pepper and fresh thyme or parsley. Cook, coat and toss till hot throughout.
- Enjoy hot with a glass of wine and warm, crispy garlic toast.

Totally! I find that jarred garlic isn’t as flavorful as fresh due to the fact that it isn’t fresh, so you may want to do a little taste test to ensure you have the right amount!

Could I use nutritional yeast instead of vegan parmesan cheese?
I suppose I’d get a different consistency and a slightly different taste but still garlicky #Imnewtothis
