In a medium-sized, non-stick frying pan heat 2 tbsp butter over medium heat. Quickly dip slices of bread into the egg mixture until well coated and add it to the frying pan.

Cook one side for about 3-4 minutes, until golden brown, sprinkle 1 tsp brown sugar on each slice (if desired) and then flip to cook the second side.

Cook a few more minutes on the second side until golden brown and then remove to a sheet pan.

Place cooked slices of french toast on the sheet pan and keep warm in the preheated oven while you cook the rest of the slices, adding butter to the pan as needed.
