Who loves a meal that takes only 15 minutes to make and is so delicious that people will never know you didn’t slave all day in the kitchen to make it? I sure do! This lemon pasta recipe I made with Good Catch Foods vegan tuna is seriously delicious, creamy, the perfect comfort meal, and loaded with flavour.

About Good Catch Foods
If you haven’t heard of Good Catch Foods, then you are probably wondering how they can make a plant based, vegan tuna that tastes like the real thing. Their tuna is made with a plant protein blend, and is great to use in any traditional tuna recipe. You don’t need me to tell you how good it is to eat less meat and seafood. We’ve all been watching the climate strikes that have been happening across the country (and world). It’s no secret that we need to try and make changes in our lifestyles to save the planet, and eating no meat, or even just cutting back, can make a huge difference. Not to mention, with the oceans being full of toxins and plastics, you are consuming these when you eat seafood. Then there is the inhumane fishing techniques, and everything else that goes along with it. It’s just easier and less worrisome to consume something different like plant-based products than have to worry about everything that comes along with consuming meat and seafood. That’s why I love Good Catch Foods because it gives people an easily accessible option!
For this lemon pasta recipe, one of the biggest tips is that you should make sure your pasta is al dente and not too cooked. This is key because the sauce and garlic will continue to cook the pasta, and make it ultra-creamy without actually using any type of plant-based milk.
This recipe will surely make your belly happy and your house smell like heaven with the lemon. It really brings you a comfort meal on your plate during the cooler fall months and whether eating pasta on the couch in front of the TV, or with the whole family at the table, this quick 15 minute meal is so perfect.
Vegan 5 Ingredient Tuna Lemon Pasta
Ingredients
- 2 servings choice of pasta - cooked - I went with spaghetti
- 1/4 cup reserved pasta water
- 2 tbsp. olive oil
- 3 large cloves of garlic pressed
- 1 packet Good Catch Foods Tuna I always use naked in water
- juice of a half a large lemon
- 1/4 cup fresh parsley
Instructions
- Cook desired amount of pasta in well-salted boiling water. Follow pasta package instructions for cooking time. But please note, you should not overcook your pasta. Make sure it's al dente.
- Heat a medium-sized frying pan on medium-low heat for 20-30 seconds. Add your olive oil and let the olive oil heat for around 15 seconds before adding your garlic. Cook down your garlic for around 3-4 minutes, or until your home is completely fragrant and the garlic has become more golden. Increase your heat to high and add your tuna, using a fork, break apart the tuna into smaller pieces. Cook for 4 minutes and stir often to avoid burning. Now you can add your lemon. Give the mixture a good stir, you will notice little bubbles starting to develop around the sides of that pan. That's when you want to decrease the heat to low and add your pasta. Using tongs give the dish a good stir and increase heat to medium while adding the reserved pasta water. Cook for around 2 minutes before adding your parsley.
- Serve hot with garlic bread and your favourite veggies!
