These super easy yogurt parfaits made with peanut butter granola only take 5-minutes to make and are perfect for a busy morning!

Who doesn’t love a simple breakfast? This recipe for a yogurt parfait with granola is incredibly easy to pull off, and it’s way more exciting than a plain piece of toast for breakfast. This recipe is healthy, versatile, and a healthy breakfast option for the whole family.

Ingredient Notes:

Greek Yogurt: Opt for a vegan Greek yogurt here or a regular yogurt. Greek yogurt is high in protein and contains probiotics which help support a healthy gut. You can use different flavors in this recipe but I choose plain as the jam and maple syrup sweeten it up. If you choose a flavored yogurt, I’d omit the maple syrup.

Chia Jam: Chia jam is usually made from simple ingredients like a sweetener, fruit, and chia seeds. Chia seeds contain high amounts of fiber and omega-3 fatty acids. They also are a quality protein source and have several minerals and antioxidants. If you want to make your own, you can use my chia jam recipe here but swap out strawberries for raspberries.

Bob’s Red Mill Granola: With school back in session, making a healthy breakfast can often be overlooked. That’s why I love this pre-made granola by Bob’s Red Mill. It’s gluten-free, non GMO, and is made with whole grains. It makes breakfast so easy. You can throw it on top of a yogurt parfait like this one, eat on its own as a snack, eat with milk as a cereal, the options are endless.

How do you make a yogurt parfait with granola?

This recipe seriously doesn’t get any easier. Start by layering two jars, cups or bowls equally with the chia jam, then some yoghurt, granola and fresh berries! Enjoy with a drizzling of maple syrup. That’s it. It’s that easy! 

Expert Tips & FAQ: 

How do you make chia jam? Use 1 package of raspberries, 3 tbsp. chia seeds and tbsp. of honey. Simply add the raspberries to a small pot and cook on low for 10 minutes or until burst. Remove from heat, add the honey and chia seeds.  Stir till combined then let it sit till cool. Store in the fridge in a tightly sealed container for up to 2 weeks. NOTE: you can make these with any type of berry, stone fruit, or fruit. 1 cup of fruit per 3 tbsp. of chia seeds is a good benchmark.

I don’t like raspberries! You can use any type of fruit in this parfait! Have fun with it and use up what you have available to you or what’s in season.

Tip: Add lemon or lime to the fruit to avoid browning or going bad

Can I substitute maple syrup? Yep! Use agave, honey, or coconut nectar instead or if the jam is enough, you can omit this completely.

How do I meal prep this recipe? If you are meal prepping these, add the granola last as they will get soft and stale.  I suggest adding the granola to a separate container and adding it to the parfait before eating.

Granola and Prep: If you are meal prepping these, add the granola last as they will get soft and stale if you make them on a Sunday and enjoy them throughout the week.  I suggest adding the granola to a separate container and adding it to the parfait before eating.
